Bruschetta with Basil and Gluten Free Olive Bread


Since cutting gluten from my diet, I have struggled in finding quick snacks that aren’t the boring nuts or fruit. This is a quick and simple snack which is also great for parties and entertaining guests!

Bruschetta with Basil and Gluten Free Olive Bread (feeds 5)


  • 2 ripe tomatoes
  • 1 spanish (red) onion
  • 1 clove of garlic
  • 4 basil leaves
  • Extra Virgin olive oil
  • 5 slices of Zehnder Gluten Free Olive Bread (found in the frozen section of my local grocery store)
  • Salt & Pepper


  • Dice tomatoes, onion, garlic & 4 basil leaves to desired size and mix well in a bowl. Drizzle some olive oil over mixture, add salt and pepper to taste and stir.
  • Place slices of bread in toaster. When ready cut each slice in half and heap mixture onto each slice.
  • Arrange on plate/platter and serve!

This was so simple and just so tasty I had to share!

It’s also very adaptable and you can add your own desired herbs and bread to suit your needs and taste-buds!

I wasn’t feeding 5 but I dislike only using half of the onion or half of the tomato so I made a little extra and plan on tossing it through some Gluten free Pasta for dinner!
